Alrighty then - :). I've posted this before, so I'm cheating with the copy/paste thing - but this cake is really worth it if you're in the mood for an easy cake with a divine lemon drizzle taste to it.

For those of you who like to bake - give this wee recipe a go. It's piss easy and doesn't take long - the results are fantastic! I'll give measurements in both Metric and Imperial.

250 grms (8 oz - 1/2 lb) of softened butter.
    2 Cups of sugar.
6 lightly beaten large eggs (go for free range if you can - no sweat if you can't though).
4 Teaspoons of finely grated lemon rind (fresh).
    2 Cups of flour.
    2 Teaspoons of baking powder.
Tub of sour cream (250 gram tub - or 1/2 pound).
Okay - here's what you do. In a large bowl - cream the butter and sugar until it's light and fluffy. Fold in the flour and baking powder - alternately with the sour cream. Bang in the lemon rind too. Mix this gently together until nice and smooth. Pour it into a well greased 23 cm (9 inch) spring bottomed cake tin. Don't go for anything less than 9 inches! Okay - whack it in the oven - 160 c - or 325F for one hour. Let it rest for a bit - then pour on the glaze.

    Glaze
    1/4 Cup of sugar.
Juice of one (or two) lemons.
Stir together - then gently spoon the glaze over the cake. Leave it for about ten minutes - and release the clip on the tin. When it's cooled down a tad (an hour or so) - remove from the tin, and you've got yourself a Lemon and sour cream cake. Serve with thickend cream or fresh whipped cream. This cake is very similar to a Lemon drizzle cake - very moist and tasty.
