Stuffing NOT Dressing

    A perfect recipie. :drool:

    Put a chicken breast, and the turkey neck in a pot with celery, poultry season and butter to boil.
    Melt a stick of butter in pan, saute a bunch of onions and a bunch of celery, add sage.
    Use Arnolds Stuffing mix and pour that mixture in with it. Add sage.
    Chop up some baby oysters very very very fine (not many)not enough to see or taste by themselves and add to mixture.
    Chop up a tiny bit of the chicken breast very very fine (not enough to see or taste by itself) Throw the turkey neck out or give to dog.
    Add turkey neck and chicken broth mixture to stuffing mix, add sage and mix all together until its really sticky.
    Add sage again and stir, add some more sage.
    Make into patties and fry in olive oil or bake in oven or cook on stove. The fried ones are orgasmic.

    Interesting...I've never boiled anything with butter and the turkey neck and all other innards are the first to go in the trash...and Im not real big on all the sage. But...to each his/her own. :xyzthumbs

    Stuffing should contain no meat. Period. There's a reason it's called bread stuffing, and that's because it's not made with 100 fucking percent sausage. Sausage stuffing is just greasy and gross. And like we need another meat to compete with the turkey. Then again, the sausage has at least some moisture content.

    I only use the neck to flavor, nothing else and I don't use the meat from it.
    All that other stuff goes in the trash.
    I had an ex that wanted me to fry the other stuff one time. I chopped up the thigh of a chicken and fried it crunchy and told him that was it.
    He said it didn't taste like his mom's but he liked it. :laugh1:

    How can it be stuffing if you don't stuff it into something? My mother always stuffed the bird, the night before even. We never got sick. But I can see how it could happen if you don't cook it to the right temp.


    Plu that's pretty much how I make mine too. I use those bags of pepperidge farm bread crumbs though. I always cook the neck and all that other stuff you pull out of the turkey's ass for my stock/broth. Lots of sage.

    I've never tried frying patties of it though. Sounds good.

    I didn't know that you only did bread stuffing with things. Down here, we tend to use the British version of sausage meat stuffing with other bits and pieces (a bit of bread, egg, herbs, onion etc). I feel roundly told off now :mercy:.
