I prefer the trinity (onion, celery, bell pepper) added to small hunks of bread (about a loaf), lots of butter (3-4 sticks), salt, pepper, parsley. Wrap it in tin foil and bake for an hour before serving. This will be some of the easiest and best tasting stuffing you've ever had. If it tastes awesome before you bake it...it will taste even better after. :xyzthumbs

Do you sweat the onion, cellery, pepper first? I think I would prefer carrots to bell pepper.

ABSOLUTELY NOT...plus we're deep frying. Stuffing the bird is old school and has been shown to drastically increase the risk of food born disease. If you want to put anything in the cavity...use some fresh citrus (oranges or lemmons)and fresh herbs (rosemary & thyme). The citrus will keep it moist while the herbs lend flavor. Get a food thermometer and cook until 165 degrees (min) where the thigh connects. Oh...and cook the stuffing seperate...bout an hour. :xyzthumbs

I dont sweat them...guess you could. Probably wouldnt hurt to throw the veggies in with the melted butter for a little while...under low heat. I've never had carrot in stuffing. I typically stay away from green peppers...but they really give the stuffing a good flavor...a lot better than I think carrots would.

Most stuffing sucks ass. Moreso if it has carrots in it. All I need is some mashed potatos and giblet gravy......and yams.
