Salmon with pecans

    Saw it on one of my cooking shows. I made it tonight. It tastes great and looks "fancy". The damn pecans cost more than the salmon.

    8 portions of salmon fillets cut in 4-5 oz. portions
    2 cups pecans
    1 Tbs. garlic
    1/2 tsp. salt
    1/4 tsp. cayenne
    1/2 cup extra virgin olive oil

    Grind the pecans up and add the garlic, salt, and cayenne. Dip the salmon in the olive oil and roll it in the pecan mixture. Lightly sear the salmon in a cast iron skillet and then throw the skillet in a 450 degree oven for about 5 min. Flip the salmon halfway through the baking.

    I had trout with pecans once, it was fantastic.

    Johnny Carino's Restaurant at NorthLite Shopping Center in Kannapolis/Concord off Dale Earnhardt Blvd. serves a Salmon Salad with pecans ..its great .
