roasted hatch chilis (hot)

    recipe for a great side dish, anyone?

    ingredients:

    15 roasted hatch chilis (fresh, not canned)
    (buy these by the bushels at nick's in aurora, colorado or on federal blvd., denver. or order online. the best ones are made in new mexico) [

    3 cloves fresh garlic, chopped finely.

    dash of extra virgin olive oil

    salt and pepper to taste


    procedure:

    peel chili and cut ends. take seeds out. chop in 1/4 inch cubes.
    mix chopped chili and garlic in a container. add a little dash of olive oil, salt and pepper.

    chill and serve with grilled bbq meats.

    also use to spread on your sandwich meats and cheese.


    this condiment will give a little southwestern kick to your dishes.

    It's tough to get hatch chilis in North Carolina. Might be impossible.

    too bad. this is a staple for me. i am addicted to it, i think.

    you'd know about hatch chilis. you used to live here. it's hatch chili season again. they only roast these in the summer. pretty soon it will be gone. so i buy them by the bushels and food save it (vacuum pack). i am set for the winter and the rest of the year.
