Ribs.... Best cooking methods

    I think the best way I've found so far is just on a plain Weber kettle. Put a small stack of coal on the side to which you had a handful every 45 minutes or so. Put a disposable foil pan under the grate to the side of the coals and add water to moderate the heat under the ribs and cook for about 4 hours. Baste the last 45 mintutes and use a beer/vinegar/spice mop throughout. I like to coil them up with a wood skewer.

    Eh.... They were kinda bland for one thing... And they didn't fall of the bone the way I had hoped they were gonna. All in all I was a bit disappointed for taking so long to cook something that was less than perfect. Would've been better off ordering to go from Smoky Bones.

    Can't argue there. The last time I cooked them, the flavor was awesome, but they were kinda dry.... So this time I tried the apple cider/chicken stock thing, and that didn't add nearly enough flavor because the ribs were basically cooked, and didn't have enough time to get that good smokey taste to them.

    Oh well. Perhaps next time.

    i'm thinking people liked my ribs pretty well...even got a call this morning from one dudes wife...she said he told her to come by and pick up another plate

    6 full racks of baby backs and they're all gone

    I cut them up in 1/3's, boiled them for 5 minutes the night before (not all at once) and then poured Stubbs pork marinade on them and put them back in the fridge...once the grill got hot, I kept all the burners on the lowest setting...as they cooked on the top rack, i had a couple of little trays directly under them with water & apple juice...when they looked almost done, I pulled them off, sliced them in singles (still not done on the bone) and pilled them all back on the top shelf...as they came off, they got ate and more went on...no more sauce was needed...patience was the key

    i would cook them that way again...i don't know that i could do anything to improve them, they were pretty fckn good

    You need a charcoal grill with wood chips, and you're in business.
