    Your temp is too high.

    Do like Chippy said. Take that fat layer off the back of them and clean up/expose the bones on both sides. Steam them with a flavored liquid in a deep, disposable pan covered with foil for roughly 3 hours @ 225. Get a quality BBQ sauce, baste them and grill for about 20 minutes and serve.

    lower the temperature, and use apple cider instead of water in your grill pan. let them cook until the meat shirvels up off the bone, 6 hours minimum. they should stay moist and be quite tasty.
