Potato Salad

    I like potato salad with a little kick. If not, just have potatoes with salt on them. Gosh.

    Drizzle, not drench some good vinegar on them (maybe rice vinegar or aged white). Use some fresh dill. You will thank me.

    Please no celery or onions.
    Mustard, mayo, prefer white(racist) potatoes, salad cube pickles. The vinegar over the cooking taters sounds good. Anyone add a couple of diced up hard boiled eggs?

    I always use red potatoes because they don't turn to mush like regular white potatoes and sweet onions medium slivers and some sweet relish, boiled egg, brown mustard just enough to change the color a tiny bit,, maybe a tablespoon

    and use a bit of Lea Perrins

    try not to use mayonaise that has sugar

    Found this online:

    Ingredients
    Potatoes
    3 To 4 eggs
    Sweet Salad cubes
    Salad dressing
    1 tsp Mustard aprox.
    Paprika
    Celery seeds orsalt to taste(optional)

    Preparation
    Boil or make potatoes salted to taste.

    Mix chopped eggs, Mustard, salad dressing, pickles, and celery (seeds or salt) to produce desired consistency. Top with a sprinkling of paprika.



    Found this one with relish:


    Ingredients
    4 lbs red potatoes
    5 hard-boiled eggs, separated
    1 teaspoon salt, divided
    3 green onions, sliced
    1 cup mayonnaise
    2 tablespoons sweet pickle relish
    1 tablespoon prepared mustard
    1/2 teaspoon pepper
    1/2 teaspoon celery seeds
    Directions
    1Cook potatoes in boiling water to cover 40 minutes or until tender; drain and cool.
    2Peel potatoes and cut into 1 inch pieces.
    3Chop egg whites.
    4In a large bowl, stir together potato, egg whites, 1/2 t. salt and green onions.
    5Using a fork, mash the yolks in a small bowl; add in remaining 1/2 t. salt, mayo, pickle relish, mustard, pepper, and celery seed; stirring until well blended.
    6Gently stir yolk mixture into potato mixture; adjust seasoning to taste with salt and pepper.
    7Cover and chill 2 hours (it is even better if you can chill this overnight and serve the next day).

    very very close to mine

    I slice the whole boiled egg into half inch pieces and gently fold them in right at the last so not to break them all up

    and I use vidalia type sweet onions instead of green onions
