Potato Cakes

    For the leftovers from holiday mashed potatoes


    2 to 3 cups leftover mashed potatoes
    1/2 cup chopped green onions
    1/2 cup chopped sweet red bell pepper
    garlic salt to taste
    pepper to taste
    1/4 cup flour
    1 egg (optional)


    mix all together and make into patties
    Heat olive oil in frying pan until hot, fry patties until golden brown

    You can also add other stuff to them ie....cheese, ham, mushrooms etc..

    Mmmmmmm.

    Egggggsalent for breakfast :woot:


    Use all the left over taters...no need for flour...use the egg. If you need more binder dump in Hungry Jack (which should be a staple in any cooks pantry)

    a splash of buttermilk in the mix is good too

    No offense, Plu, but why would you ruin a perfectly good dish with onions & peppers. yuk

    You can make em plain too but they they are just fried mashed potatoes. :lizard:

    I know. My mama usta make'em occasionally when I was a wee tot, sans the odorous onions and yukkie peppers. I luvs my potato pancakes[and potato bread too].

    We used to have those when I was a kid. We always had onions in them but rarely the peppers but that does sound pretty good.
