Portable lunches

    I'm sick of the same old stuff to carry to work for lunch, & I don't want to eat out too often. Tired of those pre-packaged microwavable things that usually taste like cardboard. And I want to eat healthier stuff than I have been.

    What do ya'll like? Got any good creative ideas?

    I like to keep those Progresso soups, trisqits (sp) and apples in my office for lunches

    I come from a Land Way Downunder.
    I usually take a salad made with raw spinach (lettuce has no `goodness' to it), and on the spot grate up courgette, carrot, fresh herbs from the garden and cut up some tomato and mix in a tin of spicy chilli tuna (or some kind of protein). It's usually that, or leftovers from the night before - and the above mentioned salad. I do put in a bit of dressing though. You could use the salad as a base, then add whatever you liked with it...egg, meat, fish etc. I've always tried to eat that kind of thing for lunch...I'm sick of spending $$$ on crap!

    Leftovers make the best lunch. Even if you go out the night before, lots of time you can hold off eating all of the meal. Get a to go box and take the remaining for the next day lunch

    I've done that entirely too often :)

    I do like salads--& I agree with you, HG, that spinach beats the hell out of any kind of lettuce. I just can't get into salad every day. Maybe 2-3 a week, unless I have something fresh from someone's garden. And salad won't get it for me at all when winter comes. (However, I should have a fairly good supply of homemade stuff in my freezer by then--soups & stews & stuff). I'll have it as a side dish at home, but I'll want something heartier & warm when it's cold.

    How about sandwiches? Anybody have favorites other than the old standbys? I do like pita bread.

    Thanks for letting me pick your brains. I'm just in a rut with this. Lately it's like I just eat because I have to, but really don't enjoy it. (It's different at home, when I can take my time).

    i was looking for veggie dinners the other day in the freezer section. none to be found, of course. anyway, that's my suggestion. cook up a bunch of veggies and take 3 for lunch. rotate around so you don't get burn out. maybe different cheeses and fruit as well.

    i love seafood, but most times it doesn't make for a good leftover

    I pack the Smart Ones meals made by Weight Watchers and a salad almost everyday. They aren't bad at all.
