my new favorite salmon recipe

    teriyaki salmon

    get yourself a nice salmon fillet, skin on, bones out. i figure 1/2 pound per serving and you'll probably have left-overs.

    the marinade/sauce:
    1 part soy sauce (good soy sauce makes a difference, too - i prefer tamari)
    1 part saki
    1 part mirin (sweet japanese cooking wine)

    for 2 pounds, i'd go with 1/2 cup each.

    mix up the sauce and let the fish marinate in it for an hour or so.

    put the fish (skin-side down) on a piece of aluminum foil on a baking sheet (lift the edges of the foil to keep the juices from going everywhere).

    pour the marinade into a sauce pan and start it reducing. you'll be using this to baste the fish. don't reduce it too much, just enough so that it doesn't just run off the fish when you apply it.

    bake the fish at 350 degrees for 30-45 minutes depending on the thickness of the fish, basting with the sauce 4 or 5 times as it cooks. the fish will be done when it flakes with a fork, has a milky runoff, and is no longer translucent in the center. depending how often you baste, it'll take a while, but the basting is worth it.

    the fish should come right off the skin with a spatula when serving. has a great mix of sweet and salty tthat works great with the salmon's own flavor.

    i like to serve it with some white rice -- the fish is pretty rich, so the rice is a nice way to moderate it. maybe some veggies sauted with a dash of soy sauce and a pinch of ginger (dry or fresh).

    the sockeye salmon that is now available is awesome, much better than the farm raised stuff. That sounds like a good recipe, I'll try it.

    Excellent dish.. I grilled mine instead of oven baking..
    I used Atlantic Salmon from the Fresh Market in Pineville.
    Next time i will use about 3/4 of the Mirin and Saki...

    Served it with sticky rice , squash, and mixed veggies... :woot:

    yeah, grilling is probably better, but i'm no good with grilling fish. maybe i just need to try it more often...
