    Squash Casserole

    5 squash (cut into 1" cubes)
    1 small onion (diced)
    1 carrot (grated)
    2 cans, Cream of Chicken or Mushroom Soup
    1 pint, Sour cream
    1 package, shredded Sharp Cheddar Cheese
    1 package, stuffing mix (not cornbread)
    1 stick of butter, at least (or equivalent amnt. of whatever)
    Garlic salt, salt, pepper (to taste)

    Lightly boil veggies in pot (not Braydens). Pre-heat oven to 350 degrees. Mix soup, sour cream and seasonings in large bowl. Butter the bottom of large casserole dish. Mix in drained veggies with soup mixture. Pour into casserole dish, top with cheese. Mix melted butter in with stuffing mix (dont be stingy with the butter) and top dish with stuffing. Bake for 30-45 minutes, depending on size of casserole.

    *Low fat soups and sour cream may leave your dish a little bland. Dont be shy about the seasoning factor. Taste your soup mixture before going any further. You can thank me later*
