    I gots maters & tommy-toes explodin' all over the garden, faster than I can pick 'em, almost.

    Any good recipes that I can freeze? I don't can stuff.

    And BTW, these are some damn TASTY maters! I hate to waste any.

    I am so envious :(

    You can make plain stewed tomatoes and freeze them.
    Canning them isn't hard at all if you do a form of cold canning. That's how I can salsa and it's easy.

    For canning stewed tomatoes...
    Pour hot water over your tomatoes and pop the skins off, peel them.
    Then put the tomatoes in a pot with a little celery seed, salt and sugar to taste. Stew until soft.
    While you are doing this, put your jars in the oven on low- (around 250) put your jar lids on the stove in a little pan and keep warm.
    Put the hot tomatoes in the warm jar and put the lid on. They seal in about 8 hours. I have never had one not to seal. It's easy and you don't have to do all that pressure cooking stuff.

    I love tommy toes too. :drool:

    above sounds good. easiest way to get the skins off is to make and x on the bottom, core out the stem and toss them into a pot of rapidly boiling, salted water for 20-30 seconds...remove and put into ice water...the skins should come right off.

    I never knew there was such a thing as "cold canning." And I've got a couple of great salsa recipes :D
