    I am in need of some really good knives. I've had a few I've considered ok over the years, but it's time I made an investment in something that will last and won't dull easily.

    Any suggestions?

    any knife can be a good knife if taken care of properly and they'll all go to shit by using them to cut on counter tops, glass/ceramic/plastic cutting boards....etc. just get the ones you have now professionally sharpened and take care of them. :twocents:

    A friend of mine who is a butcher likes Chicago Cutlery over the more expensive German knives. I've also heard several opinions of Wustof over Henkels.

    I looked at those Wusthofs tonight....yeeeesh- 400 bucks for about 5 knives. :thud:
    I'll look into all that's mentioned though and the Chicago ones for sure-Thanks all.
    My daddy used to keep all my knives sharpened although they were just the stainless steel, cheap kind from the cattle sale, I still loved/love them, they just aren't sharp anymore. I have a tomato knife from that group that I would kill someone for.
    I want some heavy, substantial ones.

    This is TOO WEIRD! I've been looking for a new set of knives too. I don't want any of that "As seen on TV" crap either. Something between Gordon Ramsey and that man down the road who guts and hangs his own sheep. My Mum sharpens her own knives - I need to learn how to do that - at her speed. It's something else, I tell ya :).
