    1 can whole peeled tomotoes
    6-10 dried chile de arbol, broiled until tender, not browned.
    1 clove garlic
    Mexican oregano to taste
    Kosher Salt to taste
    Lime juice

    Blend it, eat it.

    5X 28oz cans, diced tomatoes
    1 cup cider vinegar
    1 onion, diced
    Jalapenos, diced (about 1/2 pound)
    Red Chilles, diced (about 1/2 pound)
    Habeneros, diced (1/4 pound)
    Fresh cilatro (a few leaves)
    Ceyenne pepper (a bit)
    Texas Pete (some)

    Combine all ingredients in large pot and cook to 180 degrees for 5 minutes.
    Makes about 9 pints.

    1 Large can Hunts Petite Diced Tomatoes
    1 Onion to taste
    1 jalapeno
    1 garlic clove
    1 very small cucumber
    1 handful cilantro leaves (more to taste)
    1 big pinch cumin
    1 pinch sugar
    edit: juice from half a lime

    Put onion, garlic and cucumber in food processor and chop very fine
    Then throw in Cilantro and jalapeno and chop small but not fine

    Add to Tomatoes
    add seasoning, stir and let set for a couple of hours in fridge if desired, then take out to room temperature ( I don't like it cold)
