Grilled Marinated London Broil

    I did a London Broil a couple summers ago this way.


    sliced it along the side so as to form a kind of pocket (cut within an inch around each edge) and then placed in an oil-vinegar marinade with a couple shots of Jack Daniels and some minced garlic.

    set in fridge to marinade a couple hours. grill roasted some portabella mushrooms, vidalia onions and red bell pepper. removed skin from the peppers and sliced all the roasted veggies up and drizzled some olive oil and balsamic over them.

    Took meat from the fridge and stuffed it with the peppers, shrooms and onion. closed the pocket with some small skewers. used a wooden spoon to embed black peppercorns into the meat. grilled very slowly to medium.

    Your quite the gourmet! Seems like more work then I put into something but sure sounds good.

    Great. I didn't know 'bout that cut. Need to be on the lookout for it and try it ala Grid's marinade/recipe.

    [BTW, the author mentioned "soup" meat. There ain't meat in soup. If you put meat in it, it's called "stew." The dumbshit. :)]
