    As I was having my roast duck tonight, I thought about potentially cooking it for us at some point. Anyone here ever cook duck?

    My ex boss's wife did ONCE. After that, they decided to go out when they wanted duck. Apparently it's not as easy to get it tender without being gamey.

    Yeah...marinate it in orange juice and jack daniles over night in a zip bag. throw it on a rotissery, bake it...whatever.

    duck is similar to chicken...just has much thicker fat/skin.

    if you just get the breast(s)...score the fat back in a diamond pattern and either grill it or sear it in a pan (fat side down) and bake it to medium rare/medium

    A friend of mine used to boil duck in almost 100% worcheshire sauce; something to do with it being awfully greasy/oily.
