Cucumber Tomato salad

    I am sure this isn't new to most of you, but with fresh cukes and toms being in great supply this is freshing and really good.

    equal amounts of tomato and cucumer cut up in chunks or however you like it, with about 1/2 red onion sliced thin, salt, pepper, and about 2tbls olive oil about 1 of balsamic vinegar. All of this is of course to your taste.
    Great on these hot evenings with some fish.

    I make a double batch and stuff the leftovers into my rubber pants and dance the jitterbug. that, too, is great on hot evenings with some fish.

    leave out the cucumer and tomato and you may be onto something great on these hot evenings with some fish.

    I usually add small chunks of mozzarella cheese and lightly toss it with some Italian dressing and finely cut fresh basil

    I was thinking goat cheese, but that sounds good too

    Have cukes out of the garden so went to the local farmer got some fresh tomatoes and starting out the summer eating well.
