Correct way to cook an omlette

    To solve the whole not getting cooked thing before the bottom turns brown, all you have to do is put another pan over the top of your skillet. This causes steam to finish cooking the eggs on top before the bottom has a chance to burn. Another thing to do is to finish under your broiler.

    the real secret is in the egg mix.

    take your eggs and run them through a blender until smoothe, then strain them to remove any remaining chunks. hot pan, oil, then follow grids theory.

    weird, all that scientific food tv show guy say that you shouldn't whisk the egs too much as it breaks down the proteins and whatnot and keeps them from being fluffy
