Correct way to cook an omlette

    You can cook at a higher heat with olive oil, butter has a lower burning temp.

    Mix butter and oil.

    I come from a Land Way Downunder.
    I use oil and a well seasoned pan, high heat and seasonings - that include dried chicken stock, garlic salt and anything else I fancy. I like to whack it all in when the oil has just reached smoking point - you get that nice crinkly, almost crunchy texture :).

    Well, crunchy isn't quite the term I'm looking for - but I like the edges to have reacted well to the hot oil. I don't leave it on the high heat, but with the oil, you get that nice bubbly / crisp consistency :).
