Now that I'm responsible for feeding the kids 4 nights a week, I've been learning a lot more about cooking. Out of 4 nights a week, I give them fast food once and cook real meals 3 nights. What I'm finding out as I talk to more people about cooking is that what some people think is cooking is not what I think is cooking. It seems that a lot more people than I realized think that frozen, canned, or otherwise pre-prepared meals count as cooking. I'm not really good by any means, but I always make stuff from decent quality raw foods. Breaded chicken cutlets, roasts, burgers, tacos, homemade soups, pasta, chicken fried steak, etc. Even though some of the stuff I cook is high in fat or whatever, I still feel like it's way better for them than all that processed, overly salty stuff.

    Anybody got any good recipes?

I cooked Monday - Red Beans. Dem was da bestest.

    1 bag beans soaked overnight
    1 large shallot
    4 cloves garlic
    1 large onion.
    Kosher salt
    Crushed red pepper
    Oil
    Cracked black pepper
    red wine
    Bacon

Bascially throw the soaked beans and everything else in a pot and simmer for like 8 hours. Then you can do whatver with it - beans and rice, quesadilla, burrito.

I dunno if it's kid food though. I made it not spicy so Jack would eat it.

$9.99/lb at Harris Teeter...thaw them in a sink full of water for half hour or so, steam a few at a time in a WOK or other steaming device, serve with melted salted butter. Serve them with some saffron rice or some sauteed vegies and you'll be da man.

My kids LOVE spicy food. They eat "suicide" flavor wings at Quaker Steak and Lube. They like beans, too, so that's a good one.

Do you own a wok? Chines is always really easy and you can cook pretty much anything you have laying around.

Plus you can make it a good time for the kids by going to get chopsticks.

Mostly looing for good, basic recipes, maybe a couple of good crock pot or casseroles, too. Anything you like that's an easy recipe to follow.
