Cooking bone in chicken breasts

    Got a whole big pack of them. Tried the crock pot and it was shit.

    Suggestions on grilling or broiling? I'm not keen on baking and frying is too much work.

    Grill them.... Charcoal grill... Low temp... Indirect heat. Baste with BBQ sauce towards the end of cooking. I like to water down the sauce just a little. Seems to help keep them from drying out too bad. Would also be a good idea to put a pan of water underneath them in the grill as well. And put a little kosher salt on them before putting them on the grill.

    If you have a meat thermometer, then cook to about 160 degrees or so, and let them rest a bit after you take them off the grill.

    make the marinade thusly (for four large bone in breasts):

    3 eggs
    3/4 cup vegetable oil
    1 1/2 cup cider vinegar
    1 tablespoon salt
    2 teaspoons poultry seasoning
    1/2 teaspoon ground black pepper

    mix either in a food processor or by whisking briskly. Set aside one third of mixture and use the rest to marinade the chicken in refigerator for 10-12 hours.

    cook on your grill on low to medium heat, basting with the reserved mixture periodically, until gone. Should take about 90 minutes. use the meat thermometer if you have to to ensure doneness.

    Fry them!! Turn on the turkey fryer and do them just like a turkey!!!! Just not quaite as long per pound. MMMMMmmmmmmmmm...... dat sho am good!

    nothin better than some good, steamed bone-in chicken. skin gets nice and chewy and meat will literally fall of the bone after absorbing all that flavor from the bone. set it and forget it. :woohoo:

    Funny. I seasoned a whole chicken the other day, cooked it in the crock pot all day, tasted one bite and proceeded to wrap in a bag and throw in the trash.

    :disappointed:

    Chicken breasts with bone in and skin I use to make soup, dumplings, chicken pie. All other chicken I cook, is boneless skinless.

    You dont have to be Gordon Ramsey to take the breast off the bone. Make soup/stock with the bones and freeze the now boneless breasts. :thud:

    I come from a Land Way Downunder.
    Grab some fresh herbs - parsley, corriander, a bit of sage - anything you have in your garden. Don't bother with dried stuff. Smash up some fresh garlic, pepper and a big whack of butter. Mix it up with your hands. Create a wee hole in each breast, and squish in the herb butter. Tuck it in and bake it in the oven. If it has the skin attached - forget the hole and massage it under the skin (you don't have to eat the skin - but it'll help tenderise the chicken and make it tasty).
