    it's a little involved but I have no problem letting it sit for 5-7 hours. It's chili, not a ham sandwich.

    I don't do all that, though I did use chorizo last time because of it.

    yeah I imagine that recipe from Larry is good but thats a lot of damn ingredients.

    We use ground turkey a lot in ours now. Made it with ground beef last night though. Lenore usually just adds a pack of McCormick chili seasoning with beans meat diced tomatoes and tomato sauce. I like it a little soupier with more broth instead of too thick.

    Nobody around here likes it very spicy so I just put a lot of texas pete in mine.

    makes sense. When I competed for chili competitions most didn't use beans, tomato, etc. I don't make that type chili. Beans add protein without fattening it. I mean, at its essence chili is the mix of pepper spice you use and the rest is a detail, but using onion, bell pepper, tomato (always diced for me) and other things most would consider 'filler' rounds it out.

    my own key is taking a blend of various dried peppers and reconstituting it in a little bit of chicken broth, really brings out some great flavors. Chipotle in adobo works if I'm being lazy.

    No beans makes sense because "con"(carne) means "without"(beans). For some reason chili con carne has taken on the definition of chili with beans.
