cheesy hash brown casserole

    man, this sounds good. does it come out gooey cheesy? of can you add more cheese? does it burn/brown on top?

    I have had something close to Grid's recipe but it called for eggs and it held it all together. Not quite like quiche but slightly firm.

    does not brown on top because you put foil over it. sorry I forgot that. I guess you could add more cheese. I don't know about what you could do as far as subbing for the mayo. I know you can't taste it or the cream of mushroom soup once it's done.

    I don't know why I even posted this. It's not like it's some kind of fancy gourmet thing, but it's good.

    I'm gonna ten-times the recipe, put it in a washtub and sit in it nude while I watch the final four saturday.

    Ohhhhh that sounds good! Mind you - so does Grid's original recipe. I'm a slave to the spud - :). Fly - do you have that version handy...how many eggs would you need do you reckon?

    Anybody who'd put onions is a perfectly good dish, that would be just fine using a little onion powder/salt instead, should promptly be taken out back and shot.

    we need more recipes like this -- i mean, my family.

    we've got like 8 things that gina makes for dinner...

    when i worked at charlotte.com, it was great because i got in at 5:30 and worked until 2ish. i would come home and cook dinner. i LOVED that. and i miss it. i really enjoy cooking, but i don't have the energy/time these days.

    Southern Yankee may be able to give a definitive answer on the proportions but I would guess two or three eggs based upon the two pounds of potato and additional moisture incorporated into the mix.
