I'm on my third day eating these Easter leftovers. I don't think I can get sick of them.

    1/2 stick butter
2 lbs. frozen hash brown potatoes, thawed
    1/4 c. mayonnaise
    1 med. onion, chopped
    10 oz. cheddar cheese, grated
    1 c. sour cream
1 can cream of mushroom soup

Melt butter and saute onion. Add hash browns, cheese, sour cream, mayonnaise and soup. Bake in 8 x 13 inch casserole dish for 1 1/2 hours at 350 degrees.

No, potato cakes but I also used leftover mashed potatoes from Easter. Its ok if you were, I guess my recipe was a little lame but I thought everyone should have it because they rock and leftover mashed potatoes just arent the same after they get sticky.

I like potato patties too. I just happened to have had leftover cheesy hash brown casserole for lunch and was inspired. you know I'd never pick on you, or anyone else for that matter. I'm sensitive to the feelings of others.

No your recipie rocked...in fact the cheesy hashbrown thing would be better with leftover mashed potatos NOT fake crappy frozen stuff.

you can make them without frozen potatoes (which aren't fake, by the way). Just peel your taters and shred them with a cheese grater.

you'd think a guy named spud would know that frozen taters are just that...frozen taters. :)

Since when does freezing something make it fake? :imagestor
