Bulgarian grilled cheese

    eight slices of bread
    four slices of wombat cheese
    1/2 cup yogurt, sliced thin
    three tablesspoons butter
    1 cup manatee milk
    1/2 cup flour
    2 cups bread crumbs
    1/4 cup onions, diced
    two cloves garlic, minced
    three cups of oil


    heat skillet on medium
    preheat oven to 350 degrees

    sautee onion and garlic and set aside

    spread butter one side of each slice of bread
    Place four slices of bread, butter side down, on skillet
    place a slice of wombat cheese on each piece of bread
    Place remaining slices of bread, butter side up, on top of cheese
    cook until bread browns, flip and repeat

    remove bread and cheese thingies and set aside to cool.

    place oil in a pot and heat to 450
    make batter by mixing flour and manatee milk, whisking briskly
    dip bread and cheese thingies in batter and place in hot oil
    after they've browned in the oil, remove and pat dry with paper towels

    place browned sandwiches in a 9-by-9 caserole dish
    sprinkle bread crumbs and sauteed onions/garlic on top and cover with sliced yogurt.

    heat for 35 minutes in oven. remove and let cool. serve with scotch eggs and Yoo-Hoo.

    Can you use low fat yogurt? It doesn't say.

    No mention of marinating the cheese, or is that just a 'given'.......
