Best Eastern Style BBQ in Charlotte/Concord Region

    Come on PB, that's the good stuff, especially with some potatoes, cornsticks, slaw, and brunswick stew!!

    my sauce:

    1 c cider vinegar
    1/4 c water
    1/4 c ketchup
    2 t worchestershire
    1 T dark brown sugar
    1/2 t red pepper flakes
    1/2 t fresh black pepper
    1/2 t white pepper
    pinch of chipotle pepper

    simmer for 30 minutes
    add on tablespoon of arrowroot powder to just enough cold water to fully disolve and stir into sauce once off the heat...this give it a little thickness to stick to meat better

    my brine is more of a marinade,

    apple juice
    salt
    Worcestershire
    beer
    sugar

    i am still experimenting. when i put the butts on the smoker i will inject them with apple juice.

    i also put a dry rub on them.

    i have been experimenting with sauces, i'll try yours. thx.

    my injection is pretty much that exact marinade...I read something from bbq dorks somewhere where they tested brining vs inection and found you can get a ton more of the liquid in by simply inecting

    That's not true. I reserve sweet stuff for deserts, except some chinese, e.g. sweet/sour pork, etc. About the only sweet meat I like is mince meat. :)

    Gross, gross, gross.

    That doesn't sound bad, but it might be a little too spicy for me. I don't usually do spicy food.
