    ... cooking shows, they always seem to use parchment paper instead of wax paper. I know there must be a reason. Any cooks out there know why?

    I think it's because parchment paper won't burn like wax paper sometimes does. It can take the heat higher and longer - and that's a bloody good thing if you can't be fagged scrubbing out the pans when you've finished ;).

    I usually just get mine from the supermarket. It really is wicked because nothing sticks to it either and you can avoid so much scrubbing of dishes if you use parchment paper first. Your local supermarket should have it Dig :).

    Dig it - are you sure it's not called "Baking Paper"?. The stuff I buy down here is called that - it's just the same as parchment - but has a less fancy name :).

    Harris Tetter. We use it all the time. HG is correct; it doesn't burn as easily and it there isn't any paraffin in it.
