1 large bunch is like 6-8 servings. Or get the pre-cut bagged stuff that has serving sizes on them.

You kind of need to judge the amount of liquid based upon how much of the pot the greens take up considering they will wilt down quickly.

I don't have an exact recipe but the method comes from my friend who serves them at his restaurant. Start with bacon and then add onion and garlic once it releases some fat. Season with salt and pepper generously. Add low sodium chicken stock (stock should be the main liquid) and vinegar to taste (a cup or two) . As much Texas Pete as you think you'd like and add the greens and cook down for 3 or 4 hours.

Heat some oil in it until it just starts to smoke and then remove it from the heat and let it completely cool. Repeat that a few times.

2 10oz cans cooked chicken breasts
      1 15oz can tomato sauce
      2 15oz cans chili beans
      1 8oz can corn
      1 1/2 cup Bisquick
      1/2 cup cornmeal
      2/3 cup milk
      1/2 cup cheddar cheese, shredded
Preheat dutch oven to 350 degrees.
Pour in undrainded chicken and tomato sauce.
Heat to boiling, then reduce heat to 275.
      Simmer 5-10 minutes, stirring occasionally.
Stir in undrained beans and corn.
      Heat to boiling.

While beans and corn are heating up, combine Bisquick, cornmeal, and milk in a mixing bowl.
      Stir until it becomes dough.

After chili has reached boiling, reduce heat to 275 degrees.
Drop dough on top of chili by spoonfuls to cover the top.
      Cook uncovered for 10 minutes.
      Cover and cook 10 minutes.
Sprinkle cheese on top of dumplings.
Cover and cook 5 minutes, until cheese melts.
