    Frying the chicken peel the meat off the bones.Chop them and mix with choped cucumber,tometo,onions.Put some salt on it.And serve.

    Best chicken salad I've ever had by far was at Rusty's Deli in Charlotte. Sharon and Park Road I believe it was near Quail Hollow. Anybody know if that place is still around?

    Ingles grocery store makes a killer chicken salad.. they use their rotisserie chicken cut up and red onion with just enough mayo to hold it together.. $5.99 a pound

    I feel the same about onion and seafood, it just destroys the taste of seafood.
