Anyone have a good chicken cacciatore recipe?

    My mom use to make it for my bother and me when we were young, and I never got the recipe. She passed away almost 2 years ago, and this was one of my favorite dishes.

    Never got around to it, had an 82hr work week, no time for anything other than fast food.

    Made some semi-homemade chicken cacciatore... and it KICKED ASS!

    4 chicken quarters
    1 jar of Classico fire roasted tomato basil sauce
    1 jar of Classico basil pesto
    1 med onion yellow
    Salt
    Pepper
    Italian seasoning
    Parmesan cheese shredded
    Olive oil
    6oz jar of sliced mushrooms

    -season chicken w/ salt, pepper, and Italian seasoning

    -dice onion put in pan w/ olive oil med heat

    - add chicken to pan, tan both sides of skin till slightly crispy(this could take up to the time it takes to drink 2 beers)

    -in separate pot add jar of red sauce + a quarter of the jar in water

    -add mushrooms, 1 1/2 tbls of pesto to sauce

    -grease 8x10 pyrex casserole dish w/ pesto (lightly w/ a brush)

    -remove chicken from onions and place in casserole dish

    -add onions to sauce and stir

    -pour sauce over chicken (lift chicken to let sauce under)

    -sprinkle parmesan over, cover tightly with tin foil, and put in oven @ 350 for 90 minutes.

    -should be fall off the bone tender...enjoy!
