    I wouldn't worry about what it's called. Try it and find out. But if you fuck it up you'll have a ton of it. I think it depends on what part of the state you're in as to whether you get lynched for having the incorrect fucking sauce. See, that's why the civil war ended correctly, you don't need a followup war over sauce.

    Again I'd worry the most about the rub and keeping moisture on it after a couple hours. I've never done it so I imagine google will know more.

    hopefully it didn't take 20 hrs . try backing off of the water in the pan. the water lever can really drag out the process
