    Too many Banana Peppers and Jalapeños. Can I freeze them and what can I make with them aside of just slicing on top of things?

    "Can" them. I doubt the results would be good if you froze them. Get a good pickling recipe and can the things, and once they're ready I'll test a few jars of each and let you know what I think.

    I've had something similar to this, and it was delicious.

    Brown bulk sausage and drain thoroughly. Either melt a soft chesse product or make a quick white sauce and add your favorite cheese to it. Mix the cheese (or cheese sauce) into the sausage. Slice the top of the banana pepper off and make a slit down one side, seed the pepper. Spoon the sausage and cheese mixture into the pepper. Cover the entire pepper with store-bought canned cresent rolls to seal them up ( Large peppers may take up to 3 cresents, but with this , the more the better). Bake according to the cresent roll can.

    throw the jap's on a hot grill and burn the fuck out of the skin. put them in a brown paper bag (closing the top) for 10 minutes. peel the burned skin off, remove the tops and seeds and freeze for later.

    I've "dried" jalapenos, just hung the entire plant with the peppers attached in the coolest part of the basement. They're sorta leathery, but still good. I don't know how this would work with banana peppers.

    Oh,for crying out loud. You seed a pepper like you peel a grape, skin a cow, etc.
