Fresh Pear Cake

    Here it is!

    2 cups sugar
    1 cup vegetable oil
    3 large eggs
    3 cups all-purpose flour
    1 tsp. baking soda
    1/2 tsp. salt
    1 tsp. ground cinnamon
    1/2 tsp. freshly grated nutmeg
    3 cups peeled, finely chopped pears
    1/2 cup chopped pecans (optional)
    1 tsp. vanilla extract
    1 tsp. coconut extract (optional)
    Brown Sugar Glaze

    Beat first 3 ingredients at medium speed until creamy.

    Combine flour and next 4 ingredients; add to sugar mixture, beating well. Stir in pears, pecans, and flavorings.

    Pour batter into a greased and floured 12-cup Bundt pan. Bake at 350 degrees for 1 hour and 15 minutes or until a wooden pick inserted in the center comes out clean. Cool in pan on a wire rack 10 to 15 minutes; remove from pan and cool completely on wire rack. Drizzle Brown Sugar Glaze over cake.

    Brown Sugar Glaze

    1/2 cup packed brown sugar
    1/4 cup butter
    2 Tbsp. evaporated milk

    Combine all ingredients in a small saucepan; cook over high heat, stirring constantly, for 2 minutes or until sugar melts. Cool to lukewarm before pouring over cake.

    Note: I poured the glaze on the cake while the cake was still warm so it would soak in.

    I'm seriously making a list to go to the store! I don't have coconut extract on hand lol. I do have some coconut though! :jester:
