Yankee ---Pizza

    taken from "Crust and Crumb"



    3 1/2 cups unbleached bread flour
    1 1/2 teaspoons salt
    1 tablespoon instant yeast
    1 tablespoon honey
    2 tablespoons olive oil
    3/4 cup buttermilk
    1 cup sourdough starter sponge


    Combine all ingredients in stand mixer on low using dough hook for 1 mintue and then increase speed and mix for 10 to 12 minutes. Add water or flour by the teaspoon full as needed.

    Place dough in bowl and cover and let rise at room temp for 1 hour.

    Divide the dough into individual balls/servings....makes 4 10-12 inch pizzas.

    spray tops with cooking spray lightly and cover in refrigerator at least an hour or up to 2 days.....freeze up to 2 weeks

    Umm.... real pizza dough doesn't have all that crap in it. Water, yeast, flour, salt and olive oil. Simple as hell.

    Put warm water in bowl, add yeast, wait about 5 minutes add salt and oil. Add some regular flour, stir it, add more flour until almost not sticky and then knead the shit. Wait about 25 minutes and make your pizza :twocents:

    ummm....Neapolitan style doesn't...there are other styles...don't be so snooty

    oh, and real Neapolitan uses sourdough and needs to ferment for several days, so there :pokestick:

    Yankee seems to think making dough is hard. I was pointing out to him how simple it can be :sultan:

    about to make one this second.....I usually do the classic style but wanted to try something different. It's actually very good too.
