    mine

    3 1/2 cups bread flour
    1/2 t yeast
    2 t salt
    1 1/2 cups luke warm water
    1/3 cup sourdough starter

    mix all the water, 2 1/2 cups flour, salt, and yeast using the paddle attachment until it is completely mixed...cover and let sit for 30 minutes

    kneed in with hook the last cup of flour and the starter until it forms a ball...the dough will be fairly wet relatively

    pour out onto floured surface and make sure hands are floured and divide into 3 equal portions and form into balls

    olive oil 3 bowls or Glad containers...anything smooth and that can be covered and can alow for some room to rise...put the dough in each and let sit outside for 20-30 minutes before refrigerating

    dough seems best between 3-6 days....take out at least 3 hours before you want to use it to let it get to room temp and finish rising...may want to put in a warm place if it doesn't seem to want to rise much

    dough is a lot of work. that's why i like to order pizza out. we tried Lorenzo's in Ballantyne a few days ago. it was ok...but not good enough to make me abandon Anzi's. best fucking pizza in CLT.
