Chicken Pot Pie

    I grilled two chicken breasts, let them cool and then cut into chunks. I thawed out some frozen veggies in boiling water and cut one potato into small cubes and blanced them in boiling water also. In a pan, I sauteed some onion in butter, added flour to make a roux and added milk. Then I added one can of chicken gravy and mixed.

    Layered the veggies on bottom of an 8x8x3" dish, then the potato followed by the chunks of chicken. Next I poured the gravy mix over it and worked a spoon around it so the gravy got well mixed in. Next I topped with a sheet of puff pastry, brushed with egg wash and baked @ 400 until it looked like this. I'll never buy another frozen chicken pot pie again.

    I'm gonna agree with Plutie here. If you're going to the effort to make it, do it with "fresh" veggies. Now, that would change cooking time and method wouldn't it?

    It's not that shit from a can but frozen veggies (corn, carrots, peas, green beans), brought back to life in boiling water.

    Trying to make this w/ fresh veggies would be too much work for the same end result. :banghead:
