    Do you have to poke holes on the breast or anything....or just dump it in there?

    I don't do anything to the meat during the brine. Just the brine. No holes, no injections, no slicing. Nothing goes into the turkey until the bake, and that's just inside the carcass

    The ice doesn't freeze it? I've heard you need to thaw it completely. This sounds damn good.

    it's already thawed at that point. Ice isn't going to freeze it, no. Just keeps it cold. I imagine you could do it in a refrigerator, but then you'd need a container that's airtight and turkey-sized, and then the fridge space for that container the day before you cook a holiday meal.

    Magnus speaks the truth about the apple juice. It's fantastic. I started doing that 2 years ago for my in-laws and they loved it. For that matter, so did I. Thas some good stuff, mang.

    I got a huge brining bag and double bagged it and set it in the fridge in a huge baking pan. I couldn't feel right about keeping it in the sink with ice, I was worried I couldn't keep the temp controlled and I'm all weird about poultry anyway.
