    Ok so, I've decided I probably do want stainless after all. I can adapt. I'm wondering though, if anyone has tried anything that would be close to the All-clad in quality? I really like the heaviness and quality.
    I know williamj,I would love it, but I don't feel like I can justify a thousand dollars for cookware right now, and that's what it would be to get the pieces I need to feel like I can pitch the old stuff.
    We'll see though, my sister is shopping with me tomorrow and she's in the market for new cookware. I've convinced her to buy all-clad. Maybe she'll hate it and I'll get hers. :evilgrin:

    I'm sure you're all waiting with bated breath and checking this every hour to see my decision huh? Thank for everyone's input, it's helped.

    I did see the emeril chicken fryer in cast iron. That lil bitch will be mine, although I don't really fry chicken. :hurray:

    i only have 4 pieces. that is all i need and i cook everyday and often for more than 4 people.

    i have 2 0r 3 hold over pots and pans from previous sets. i am saving for a new piece right now.

    When you use pure stainless. It is important to preheat the pans and pots before you use them. Plus you should get a good stainless cleaner and clean your pans about once a month.

    When boiling water w/salt. Only add the salt after you get to a slight boil. If not the salt will pit the bottom of the pots.
