Cooking bone in chicken breasts

    we cooked 50 chicken halves over a tractor tire rim filled with charcoal last memorial day. there's a little outfit up here that cooks and sells a quarter million every summer and sells that much to volunteer fire departments to make themselves for fundraisers. in a pinch, I use Chiavetta's marinade. not quite as good, but pretty close.

    There is an outfit down here as well, involved with various fund raisers. They have cooked for United Way fundraiser, selling 7000 meals of Half Chicken and sides. It is always worth buying. I haven't seen Chivetta's marinade down here, but at least we have the recipe.

    fuckin' A. I'm getting four halves to cook Sunday. cole slaw and tater salad on the side. Maybe a beer or eight

    They are the best for BBQ chicken or dishes such as cacciatore. I'm not sure why you would consider them to be that different.

    the easiest way is to salt and pepper them, then brown them in a pan with a quarter inch of oil,, after browned nicely all over finish them in a 400 degree oven until 160 to 170 degrees in the middle(15 to 20 min usually depending on size)

    simple and always very moist and flavorful
