Grilling verses Smoking

    What with the ribs thread and the thread in R&R Putt brought back of someones grilling it got me thinking and hungry. I have a nice gas grill, a smoker I have never used and a Lil Smokey charcoal grill I use for tail gating. I want to learn how to smoke some ribs or a Boston Butt for BBQ.
    The smoker is a charcoal one that looks like R2D2, and I am not sure if it has a door on the bottom to add additional charcoal or soaked wood when the temperature gets below 225 (I have read that's the best temp to smoke at?) Can anyone offer up how they cook ribs and or Butts using either a grill (indirect heat I am assuming?)

    My brother has one, it is by far the best. he did the cooking so I cant help you, but it was very yummy.

    The key is you have to really want to do it and enjoy it becuase it is time consuming. I suggest getting a digital meat thermometer and as well as one that tells the cooking temp accurately. Most just say warm, ideal, hot. For a butt, get the temp to 195 either by smoking it for about 17-18 hours or 12 hours and then wrapping in foil the last 45 minutes or so. It will fall appart once it gets up near there in temp.

    Smoked Boston Butts are fabulous. While you're doing one, smoke some cheese as well. delicious!
