mexican pizza

    slather abut quarter inch layer of refried beans on top of a sheet of Boboli bread. Mix a half cup of sour cream with taco sauce (amount and hotness to taste) and spread that on top of the refried beans. spread a shitload of diced sweet onion and red, orange and yellow bell pepper on top of that. Cover that with grated mexican mix cheese. put sliced black olives on top of that. cook for around 20 minutes at 375.

    fold entire pie in half and eat like a taco.

    If'in you dont have gourmet crust such as Boboli...take a soft, flour tortilla and brush with olive oil on both sides and place in a semi-hot pan to crisp it up...then do as above but only cook until cheese is melted.

    I know boboli isn't gourmet, but I like it.

    I like them too. The thin crust is better than the original, IMMFO. I havent tried the wheat crust.

    I only call them gourmet because they're a lot better than the alternative, schwag pre-made crust found in the butter section.

    used to make something like that but sauteed the peppers, onions and chicken with fajita seasoning. A Fajita pizza. You could garnish a slice with salsa, guacamole, sour cream, lettuce, whatever. Pretty tasty
