Great Catfish Stew

    For one pound of catfish


    1 pound of catfish
    3 slices of bacon
    1 cup diced onion
    1/2 cup bell pepper
    1 28 oz, can of tomatoes(I like diced)
    2 cups peeled and diced potatoes(I like red potatoes because they don't tun to mush)
    1 cup water
    1/4 cup catchup
    2 tblspoons worchester sauce
    1 tsp salt
    1/2 tsp pepper
    1/2 tsp thyme



    cut catfish into chunks

    fry bacon bust up and add peppers and onion and cook until tender

    add remander of ingredients and simmer for 20 minutes

    take the water and poach an extrta 1/3 pound of catfish and hit it with a hand blender when soft and add it to the mixture(that is the key)

    cook and cover for 20 minutes then add the rest of your chunk catfish for an additional 20 minutes

    take a taste and add hot sauce if you want then adjust to your liking

    I just made a batch with ten pounds of beautifully filleted catfish
