Favorite Potluck Dishes

    If you're going to a potluck, do you have a favorite dish to take--or to find that someone else has brought, & scarf down?

    We've had a few potlucks where I work, & everyone's enjoyed them so much that we're starting to do them fairly regularly. My squash casserole & lemon chiffon pie both went over well, but it's fun to throw a little something different in now & then :smile:

    My squash casserole recipe:

    Squash Casserole
    2 lb (about 5-6) yellow squash, sliced, steamed, & drained
    salt to taste
    1 can cream of celery soup
    1 medium yellow onion, finely chopped
    1 8-oz carton sour cream
    3/4 to 1 cup diced or grated Colby/Jack cheese blend
    1 cup seasoned dry bread crumbs
    1 stick (8 TBS) butter, melted
    Combine all ingredients except bread crumbs & butter. Mix well. Pour melted butter over bread crumbs. Line casserole dish with bread mixture. Fill with squash mixture. Top with remaining bread mixture. Cover & bake at 350° for 20 minutes. Uncover. Bake 10 more minutes.
    Freezes well.

    I fucking hate these things. Because my GFs no cooking mother keeps calling and asking what we can cook her for her get togethers.

    So last week i had the pleasure of having to smell 3 racks of ribs all night long and couldnt get a bite. I hope you fuckers enjoyed them.

    cheesy motherfucking hashbrown casserole


    1 lb. frozen diced hash browns
    1/2 stick (1/4 cup) melted lowfat margarine, divided
    1 can cream of chicken soup
    1 cup sour cream
    2 cups shredded cheddar
    1/4 tsp. pepper
    1 tsp. light salt
    1/4 cup chopped onion
    1 cup cornflake crumbs

    Preheat oven to 350 degrees. Melt 4 Tbs. butter in 13X9 baking dish. Put frozen hash browns into dish. In large mixing bowl, blend together soup, sour cream, cheese, salt, pepper and onion. Pour over potatoes. Combine remaining melted margarine with cornflake crumbs until moist. Sprinkle over potato mixture. Cover with foil and bake 30 minutes covered. Remove foil and bake 15 minutes uncovered.

    My mother-in-law's deviled eggs rock. I could eat half a platter of those things.

    I had some of a dish called "7 layer salad" recently, it was really good.

    My wife makes a pretty fair 7 layer bean dip, and a very popular fruit salad.
