    Actually, the searing myth was proved fake on Alton Browns Good eats.

    He took two slabs of steak, the seared one actually lost more weight, ie lost more juices.

    However, searing or browning does add to the taste "carmelisation" and color of the meat making it more desireable and tasty.

    no matter how you cook it (unless you boil or steam it)...it's all about letting the meat rest before cutting it.
