grilling meat

    how does everyone cook their meat (mainly steaks)on the grill? high temp for a shorter time or lower temp for a longer time?

    Yep. I grill on high. About 4 minutes per side. Depends on the thickness (Fred...builder...no comments about thick meat please).

    To cook a good steak on the grill the temp needs to be 400 or higher to sear it. You can sear it on both sides and then drop the temp to get your desired 'doneness'.

    i grilled some chicen breast (boneless, skinless) friday. i did it at too low of a temp -- not juicy at all. maybe i shold have cranked it up and seared?

    i just get worried with poultry. fish and steaks, not so much.

    Chicken is doesn't sear well, it burns. You need to grill it slower and check the center temp. to just under 160 and take it off. One way to get good juicy chicken is only grill 'bone-in' chicken with the skin on an baste it well.

    yeah, gina bought these teriaki chicken breasts that were individually sealed and marinated. bone always seems to do better on the grill. package said 170 degrees, so i probably waited too long anyway.

    Remember too that even though you take things off the grill the continue to 'cook' for several minutes. You can sear those filets but then move them over to indirect heat. My old neighbor would microwave the breast for a short time before he grilled them. Said it took less time and kept the moisture. Never tried it, I always thought the chicken would be rubbery.

    Also, never put marniated, boneless breasts on the grill. The sauce will burn before the chicken will. I put the sauce on the chicken at the end and cook it on.

    I dont use the grill. I like my steaks seared in a cast iron skillet...about 4 minutes on each side depending on the thickness. If the steak is thick, I fire up the oven to 450...sear on one side for 4-5 minutes, flip it over and put in the oven for another 4-5 min. When times up, take the meat out of the pan and let it rest. I then saute my onions and mushrooms on high heat for a few minutes. Take them out, deglaze with wine, add a few dollops of butter and get a nice sauce to put on the meat and veg. :newsmile30:

    This is the best way to cook a steak. Smokes up the kitchen but it is worth it.
