    This was a x-mas gift. Going to the Viking store from 10 to 3. I am looking forward to it. I am a pretty good cook but I never have taken a formal lesson. I am hoping they will have a little wine around too. I work better with wine. :newsmile9:

    oh and some hot milfs would be nice too.

    Sounds like it could be fun, with or without milfs :smile: I've made friends with a chef here, & have learned all kinds of cool stuff just from hanging out with him now & then.

    It was great! Had a great chef. We made everything from chicken stock to when you clarify butter what is happeing, vingerette, roasted red pepper soup, sauteed chicken with garlic and onions, real rice pilaf, amandine brocholi(sp?). It was really a great experience.

    Here is a little tip. The touch test for meat. Take your hand open and tap the muscle right under your thumb. Take you first finger and put it to your thumb with no pressure. That is rare. Take you middle finger and put it to your thumb with no pressure. tap that muscle. That is medium rare. Take your pinkie, thumb, well done. It works.

    Also he promoted using grape oil over canola. Has a higher burn point. I have never heard of grape oil. Tastes just like regular oil. Also, butter, not margarine-chemicals. Sea salt over table(you need more sea salt since it doesn't have all the chemicals).

    We got to use ceramic knives too. Nice but too small so far. Also, silicone has obiviously taken over the basting brushs and tin foil for baking sheets. Non-stick, and high temp.
