    :drool: It must be time to make meatloaf again.

    My mom makes a great one with a ketchup topping, but I like my recipe & topping better. Imma have to try adding the bacon to this--that just sounds heavenly :smile:

    AK's Meat Loaf
    2 eggs, beaten
    3/4 cup milk
    2/3 cup fine dry bread crumbs or 2 cups soft bread crumbs (dry oatmeal works too)
    1/4 cup finely chopped onion
    2 tablespoons snipped fresh parsley
    1 teaspoon salt
    1/2 teaspoon dried leaf basil, crushed
    1/8 teaspoon black pepper
    1-1/2 pounds lean ground beef
    1/4 cup ketchup
    2 tablespoons packed brown sugar
    1 teaspoon dry mustard
    Combine eggs and milk; stir in bread crumbs, onion, parsley, salt, basil, and pepper. Add ground meat; mix well. Lightly pat mixture into an 8x4x2-inch loaf pan. Bake @ 350°for 1 to 1-1/4 hours or until internal temperature registers 160°. Spoon off fat if necessary. In a bowl combine ketchup, sugar, and mustard; spread over meat. Bake for 10 minutes more. Let stand for 10 minutes.

    This thread got me craving meat loaf, so when I got un-trapped by the snow & ice & finally got groceries, I got what I needed; & I made one tonight.

    I'm a damn fine cook. YUM!

    sure star. im at work tonight but will post it for you in a day or so. i'll need to check the cook book to get it exactly right. damn, now im hungry.
