    if you're using ebrew's stuff, I've made that red before. It didn't come out quite as authentic Red but it tasted like a ridiculously good amber.

    If you are comparing it to Killian's it's not gonna taste like it at all. Killian's uses a lager yeast instead of an ale yeast.

    murphy's, but that's a lager yeast, too.

    Have you ever messed with re-using yeast?

    That'll do it. Nothing affects the taste of beer more than the yeast.

    No, there is no need to do so nowadays. The stuff you get from the labs is so pure, consistent, and so easy to use that you would be getting an inferior product for much more work.

    just wondering. I have two half-filled bottles of belgian abbey yeast that ebrew gave me for the wit - didn't have the wit yeast and had to make a batch for a party - and it came out pretty tasty, added a note of vanilla to the coriander/orange. Whether I was going to make another wit this summer (didn't - two batches of witbier in a year's enough for now, even though I split it with a lot of people) or not, I figured making a belgian golden wouldn't be bad, so I saved some, bottled it, and it's sitting. Figured that way, I could come out with a fairly cheap batch next time since I could just piece together the recipe with a more local brew shop.




    After the pumpkin ale, I'm looking at making a vanilla porter. My good friend Jake, who got into this with me, finally broke off and ran with his setup now too, so I've gotten some of his brown and his Old Peculiar clone recently. What's the Christmas brew like?

    Do 2 batches and compare them. I'd be interested to see if there was any difference at all.

    It's got a ton of subtle flavors. You add orange peels, cinnamon, and a bunch of other Christmassy spices/fruits. But it all works in the end. It's a fairly hoppy brew as well.

    Tried it against the older wit and there was a little difference. I liked the newer one, Jake liked the other one. FWIW, the local Brewpub, Natty Greene's, had a wildflower wit seasonal and the first one tasted pretty much 'on' with it.

    Weird. Might be worth a try though, just like I wouldn't have figured us to make a blackberry wheat, this one's different too, but hell, might make an interesting gift.
